Pineapple Cake






Hey foodies, Summer is all about colours, fresh fruits and fun...!! Among all the fruit cakes, pineapple cake is the most loved one. No doubt Pineapple cake is THE PERFECT TREAT in summer. Homemade bakes are always loved but homemade bakes with your favourite flavour is like an endless joy. So let’s learn how to bake yummiest pineapple cake at home. 

This recipe you can bake at home with easily available ingredients. This is a no egg, no condensed milk, no oven cake. 

Ingredients :-

For 1/2 kg cake 

Fresh curd - 1 cup 
Powdered sugar - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp 
Vanilla Essence - 2-3 drops
Unflavoured oil/ ghee/ butter - 1/4 cup 
Maida (all purpose flour) - 1 cup 
Milk (at room temperature) - 1/2 cup 
Pineapple crush- 2-3 tbsp 
Whipping creams
Sugar syrup 

Procedure :-

For Cake

- In a bowl take 1 cup fresh curd and add 1/2 cup powdered sugar and mix well. 
- To the mixture add 1/4 tsp baking soda and 1/2 tsp baking powder and mix them well. 
- Add few drops of vanilla essence. 
- Add 1/4 cup unflavoured oil/ butter/ ghee and mix all the ingredients well. 
- Now add 1 cup maida gradually and then add 1/2 cup milk and mix all ingredients well. 
- Mean while, preheat pressure cover for 10 mins. 
- Grease the mould with oil/ butter from all sides and transfer the mixture to it. 
- Tap the mould twice and transfer it into the preheated cooker. 
- On low flame bake the cake for 35-40 mins. 
- To check whether cake is perfectly baked or not, insert a tooth pick or knife in cake and check. If it comes out clean means cake is perfectly baked
- Now take out the mould from the cooker and cover it with a clean and wet cloth and let it cool down   
- Once the cake cool down, remove it from the mould and transfer it to the plate. 

For icing

- Take a chilled empty bowl and add whipping cream to it. 
- Using beater, on high speed whisk the whipping cream until it get double in size and form stiff peaks. 

For decoration 

- Cut the cake into 2/3 equal layers and apply sugar syrup to 1st layer. 
- Now spread the whipping cream equally on the 1st layer and add pineapple crush to it. 
- Repeat the above procedure for remaining layer. 
- On the last layer, cover the top with whipping cream well. Cover all the sides with whipping cream. 
- Now take a piping bag and any nozzle of your choice and decorate the cake.

Keep the cake in refrigerator for 7-8 hrs for perfect taste.
